In Jamaican cuisine, Oxtail Bourguignon, also known as Oxtail Stew, is a beloved dish often cooked with traditional ingredients such as thyme and peppers. The oxtail is then browned to develop rich flavours before being simmered slowly with onions, carrots, and other vegetables.
INGREDIENTS
2 Tbsp Oil
1kg Oxtail
1 Onion, chopped
4 Garlic cloves, crushed
4 Tomatoes, finely chopped
3 Carrots, chopped
1 Tbsp Chutney or brown sugar
5 cups Hot water
Salt and pepper, to taste
4 Tbsp IMANA Super-Sheba Rich Oxtail Flavoured Stew Mix
METHOD
Heat the oil in a heavy based pot.
Season the oxtail with salt and pepper.
Brown the oxtail in the hot oil. Remove and set aside.
In the same pot, add the onion, garlic and carrots and fry for 2 minutes.
Return the oxtail to the pot and add water, tomatoes and chutney or sugar.
Reduce the heat to medium and cook for 1 1/2 hours.Â
Add IMANA Super-Sheba Rich Oxtail Stew Mix and cook for a further 20 minutes.
