Dating back to the 1800’s, this baked dish is loved by many and is often cooked with chicken, beef, fish or mutton along with delicious vegetables. Early casserole dishes consisted of rice which was pounded and pressed and filled with a mixture of savoury meats.
INGREDIENTS
Oil
½ cup Flour
1 ½ kg Chicken portions
2 Onions, sliced
1 Green Pepper, sliced
2 cups Water
¼ cup Mustard
¼ cup Chutney
3 Tbsp Brown Sugar
1 IMANA Chicken Noodle Flavoured Soup
2 IMANA Chicken Flavoured Stock Cubes
METHOD
Preheat the oven to 160˚C.
Mix the flour and half the packet of IMANA Chicken Noodle Flavoured Soup powder.
Roll the chicken portions in the flour mixture until completely coated.
In a large pan, fry the coated chicken portions in oil until golden.
Arrange the cooked chicken portions in an ovenproof dish with a lid. Pour out excess oil before frying the onions and green pepper until soft.
Add the remaining IMANA Chicken Noodle Flavoured Soup powder, IMANA Chicken Flavoured Stock Cubes, water, mustard, chutney and sugar to the pan.
Spoon the sauce over the chicken pieces. Cover dish and bake for 1 - 1½ hours.
Serve hot with rice.
