Comforting Bean and Oxtail Casserole

Known to be a delicacy and staple in Jamaican cuisine, oxtail is a rich and tender meat that is often combined with vegetables to create a delicious stew or casserole dish. Oxtail has been eaten since the 1500’s, and is well-loved around the world.

INGREDIENTS

  • 1 cup Sugar beans

  • 750g Oxtail

  • 1 Tbsp Oil

  • 1 Onion, chopped

  • ½ cup Bacon, chopped (optional)

  • 1 Tin Tomatoes, chopped

  • 2 cups Hot water

  • 1 cup Rice

  • 2 Tbsp Margarine

  • 1 IMANA Rich Oxtail Flavoured Soup

  • 1 IMANA Chicken Flavoured Super Stock Cube, crumbled

METHOD

  1. Preheat the oven to 180°C.

  2. Boil the sugar beans in unsalted water for about 1 hour until soft. Drain and set aside.

  3. In a pan, brown the meat in the oil then place into a casserole dish.

  4. In the same pan, fry the onion and bacon.

  5. Add the prepared sugar beans, chopped tomatoes, IMANA Rich Oxtail Flavoured Soup powder and water to the pan. Bring to the boil while stirring. Remove from heat.

  6. Pour the soup mixture over the meat, cover and bake for 1 ½ hours, stirring occasionally until the meat is tender. You may need to add extra water if the casserole seems dry.

  7. Cook the rice as per packet instructions and drain before stirring in the crumbled IMANA Chicken Flavoured Super Stock Cube and margarine.
